Over the past 20 years, the food-to-go market has boomed.
People spend more and more of their waking hours away from home, whether at work, at leisure, commuting or on long-distance travel. Airports, sea ferry terminals, railway stations, motorway service areas and large filling stations now typically offer food courts and bars to rival those in the larger shopping malls.
